Who doesn’t love a good ol’ pasta salad recipe! Well, me actually. At least not the classic version of it, by which I mean an overcooked pasta drenched in mayonnaise. Just can’t do it.
Finally a pasta salad recipe that LOOKS like a salad! Cherry tomatoes, red peppers, walnuts and olives dressed in a delicious basil vinaigrette. This summer staple is going to become a huge hit at picnics and BBQs.
Pasta Salad Recipe with Basil Vinaigrette

- 300 g spiral pasta
- 1 red pepper
- 2 tomato
- 1 clove of garlic
- walnuts
- 80 g grated parmesan cheese
- 3 sprigs basil
- 1 onion
- Salt
- black pepper
- 150 ml olive oil
Instructions
- Step 1
- Cook the pasta in salted water for the time indicated by the manufacturer. Drain and cool with cold water. Drain it again and spray it with oil.
- Step 2
- Clean the pepper, wash it and cut it into sticks. Peel the onion and cut it into julienne strips. Peel the tomatoes, remove the seeds and cut them into cubes. Sauté the pepper and onion 3 or 4 minutes in a pan with a few drops of oil. Peel and chop the nuts. So that the sauce does not darken, blanch the basil leaves before crushing them.

- Wash the basil, reserve some leaves to decorate and crush the rest with the peeled garlic, the Parmesan, half the walnuts, the remaining oil, salt and pepper, 1 or 2 minutes. Mix the pasta with the sautéed vegetables, the tomato and the remaining walnuts. Water with the basil sauce. Garnish with the reserved basil and serve.
